SubSa was born in Australia, but its soul comes from Sub Saharan Africa.

We looked around the Australian food landscape and saw rich representation everywhere. Asian cuisines celebrated for their depth and variety. Italian food woven into everyday family meals. Greek, Middle Eastern, Thai, Vietnamese, Indian, Mexican all proudly claiming their space on supermarket shelves and dinner tables across the country.

But one thing was missing. African food.

Yet at backyard cookouts, weddings, festivals, and community gatherings, we noticed something undeniable. When African food showed up, it was the first to finish. Plates cleared. Conversations paused. People came back for seconds and thirds.

So we decided to take away the guesswork.

SubSa exists to bring the best of African cooking to the Australian table in a way that is accessible, trusted, and unforgettable.

This journey is led by two women whose paths were always meant to cross.

One is a food scientist with an uncompromising commitment to standards, safety, and shelf ready excellence. The other is a chef, academic, lecturer, and researcher who has spent years feeding communities, telling cultural stories through food, and asking bigger questions about identity, migration, and belonging.

Together, we bring science and soul into the same jar.

Before SubSa ever sat on a shelf, African flavours were already being tested and loved across Sydney. Through Charcoal and Chops, Dr Jo has catered to over 3,000 clients, serving African inspired food at weddings, corporate events, celebrations, and family gatherings. Time and again, the response was the same. People loved the flavour. They just did not know how to recreate it at home.

SubSa was the answer.

Behind the scenes, Food Synthesis, led by Rumbina, has helped pave the way not just for SubSa, but for countless food entrepreneurs.
